Local Chefs To Compete In Gippsland Signature Dish Grand Final

Latrobe City’s gourmands are in for a treat when two local chefs compete in the 2009 Gippsland Signature Dish Competition, to be held on Sunday 1 March at Lardner Park in Warragul.

Trevor Perkins from Maryvale Private Hospital in Morwell and Lewis Prince from Neilsons in Traralgon, will battle out the final with Raymond Garrad of The Grayn Restaurant, Pakenham.

Latrobe’s business development officer, Donna Starkey said that Lewis Prince is no stranger to the cook off.

"Mr Prince has competed in the Gippsland Signature Dish grand final cook off twice before and actually took out the award in 2007. However, this is the first time Perkins and Garrad have made the final and with $2000 of prizes up for grabs, understandably, all three are very keen to make the 2009 title their own.

"The grand final will take place during the Jindi Cheese Harvest of Gippsland festival, live on stage at 2.30pm, with experienced television presenter and Melbourne restaurateur, Caterina Borsato, who actually hails from Gippsland, compering the event," Ms Starkey said.

"Trevor Perkins will be cooking Spring Bank rabbit, which he will wrap in Strzelecki hills smoked goat mocetta and serve with Thorpdale potato, vegetable ratatouille and a peppered plum jus. He has chosen Bass Phillip Village Pinot Noir 2004 to complement his dish.

"This year Lewis Prince will be preparing a seafood creation of Boolarra South tea-smoked Lakes Entrance snapper with local crab and horseradish panna cotta, Warragul saffron caramel, baby herbs, snapper crackle and Cockatoo beetroot pearls matched to Narkoojee Reserve Chardonnay 2006," Ms Starkey said.

"Raymond Garrad’s dish is an unusual, yet clever combination of Gracefield venison, marinated with Sunny Creek organic berries, which he will then present on a rosti of Mirboo North sebago potatoes, Koo-Wee-Rup asparagus and serve with Sunny Creek berry jus and oven roasted truss cherry tomatoes. Garrad has chosen to match his dish with Toomah Cabernet 2001," Ms Starkey said.

Ms Starkey added that the three judges who have the enviable task of tasting each dish and choosing the overall winner are Jane Faulkner, The Age food and wine writer, chef Alan Harding and Melbourne Community Farmers’ Markets manager, Miranda Sharp.

"New to the Jindi Cheese Harvest of Gippsland this year is the Gippsland Signature Dish People’s Choice Award. Separate to the grand final cook off, organisers have chosen three highly commended entries to compete live on stage at 12 noon to compete for $1000 of prizes.

"Once again, Latrobe City is represented with third year apprentice chef Matthew Medew of the Century Inn, Traralgon to compete against Bernard Liversidge from Garrard's of Coal Creek in Korumburra and Bijay Prakesh of Gypsy Creek Winery, Labertouche. As the name suggests, the People’s Choice Award winner will be chosen by the audience with some lucky people also having the opportunity to taste the dishes," Ms Starkey concluded.
