Food Safety Celebrates 10 Years

Wellington Shire Council is celebrating 10 years of National Food Safety Week.

By Wellington Shire Council - 12th November 2007 - Back to News

The event, to be held 12 – 18 November, is a reminder to residents of the importance of good food safety in all aspects of life.

This year’s theme is ‘Back to Basics’ and focuses on the main food safety messages of clean, cook, chill and separate.

Council’s Environmental Health Coordinator, Samantha Lowery, said it is important to understand the basics of food safety

"Following some simple steps will assist in ensuring a safe food supply, whether it be in the home, outdoors, shopping or when eating out."

The basic food safety tips are:

  • Clean your hands, cooking utensils and all surfaces your food will touch. Hands should be washed with soap under warm, running water for 20 seconds and dried for 20 seconds.
  • Cook chicken, sausages, hamburgers etc right through, until the juices run clear. Avoid the temperature danger zone – serve hot food steaming hot. Put leftovers straight into the fridge as soon as they stop steaming.
  • Chill all food as soon as possible after cooking or buying. Make sure your fridge is clean, uncluttered and 5°C or below. Ask for ice when buying fish.
  • Separate foods that are served raw such as salads and foods such as fish, chicken and meat which are served cooked. Make sure fish, chicken and meat are stored below other foods to avoid cross contamination.

"With an estimated 5.4 million Australians suffering from food poisoning each year, and a quarter of these caused by bad food handling practices in the home, it’s obvious we need to follow some basic food safety behaviours in our daily routines," said Ms Lowery.

As a part of food safety week there will be a display in the main foyer of the Port of Sale Customer Service Centre. This display will include a full range of food safety information for both members of the public and food premises.

For further food safety information please visit the display in Sale during food safety week or contact the Environmental Health Office on 1300 366 244.
