Gippsland Chefs To Cook Up A Local Treat

held at the Harvest of Gippsland Festival on Sunday 11 March.

Latrobe City’s senior economic development officer, Leo Billington, explained that Latrobe City Council has once again thrown its support behind the ‘cook off’ by co-sponsoring the competition.

"Each chef must source and use foods and wine from any one of the sponsoring municipalities in preparing their dish. There is an abundance of local produce to select from, but the challenge for each chef is to select produce and create a dish with maximum appeal to palate and senses," Mr Billington explained.

"All three chefs will compete live on stage at 3pm at the festival, actually preparing their signature dish creations using locally grown produce and matching the dishes to a local wine under the watchful eye of the competition’s MC - well known food identity, Gabriel Gaté."

Last year, local chef Carly Rainbow, from the Century Inn Terrace Café was selected as one of three finalists in this prestigious competition. Carly competed against two other top Gippsland chefs when the Gippsland Signature Dish Cook Off was held at the Lardner Park based festival.

Carly, who also completed her three year apprenticeship at Century Inn, last year, cooked char grilled Warragul quail on a Hazelwood tomato and Tarago River goat’s cheese tart with a rocket pesto, all superbly matched to a Pinot Noir from West Gippsland’s Cannibal Creek winery. Her original recipe also included olive oil from Pedros Olives based at Tyers, hazelnuts from Erica and asparagus from Koo Wee Rup.

For competition co-ordinator, Sophie O’Neil, last year’s Gippsland Signature Dish competition was a huge success with a great range of entries.

"This year, there is $2000 of prizes up for grabs including $1000 cash for the winning chef plus $1000 advertising with the Star News Group. There is no limit to the number of entries a hospitality business can submit, so all restaurants and cafes throughout the three sponsoring municipalities are encouraged to enter their head chefs, sous chefs or apprentices. All can enter," Ms O’Neil said.

"This year, the judges, who include renowned Yarra Valley chef, Alan Harding; chef and food writer for The Age Epicure, Miranda Sharp; and wine educator and consultant, Jenny Pollack; are looking for chefs and cooks to really ‘go for gold’ with their creations."

"Local chefs and cooks will really need to know their local products and producers, and strive to use as much local product as possible," Ms O’Neil added.

Written entries must be submitted by Monday 12 February 2007. From the written entries, three finalists will be chosen to participate in the Star News Group Gateway to Gippsland Signature Dish cook off at the Harvest of Gippsland Festival, and compete for the Gippsland title.
