Local Chef Cooks Up A TreatLocal chef, Carly Rainbow, from the Century Inn Terrace Café has been selected as one of three finalists in the prestigious Gippsland Signature Dish Cook Off. By Latrobe City Council - 8th March 2006 - Back to News The Cook Off will be held on Sunday 12 March at the Harvest of Gippsland Food and Wine Festival, Lardner Park.
According to Leo Billington, Latrobe City’s senior economic development officer, Carly will compete with two other Gippsland based chefs at the second annual Gateway to Gippsland Food and Wine Network’s Signature Dish Cook Off. Each chef must source and use foods and wine from any one of the sponsoring municipalities, Latrobe City, Baw Baw Shire and Cardinia Shire.
"All three chefs will compete live on stage at 3pm, actually preparing their signature dish creations using locally grown produce and matching the dishes to a local wine under the watchful eye of the competition’s MC, well known food identity, Gabriel Gaté," Mr Billington said.
Carly, who completed her three year apprenticeship at Century Inn, and is now almost into her first full year as a chef, will be cooking char grilled Warragul quail on a Hazelwood tomato and Tarago River goat’s cheese tart, with a rocket pesto; all superbly matched to a Pinot Noir from West Gippsland’s Cannibal Creek winery. Her original recipe also includes olive oil from Pedros Olives based at Tyers, Hazelnuts sourced from Erica and asparagus from Koo Wee Rup.
"Besides Carly, the other local chefs competing in the Signature Dish Cook Off are Brendan Hudson from the Outpost Restaurant in Noojee and Karen Yann from Bistaari Park, Tonimbuk," Mr Billington explained.
Brendan Hudson, who was a finalist in the competition last year, will be preparing pan-fried Neerim rabbit on a roasted beetroot and mizuna salad with pickled walnut juice, matching the dish with Tanjil Pinot Noir.
