GippsTAFE Hospitality Coordinator, Vince Fede, recently attended the world’s second largest food expo, which was held at Hotel Asia in Singapore.

Mr Fede represented GippsTAFE and the Department of Natural Resources by participating in the Victorian Team, cooking Gippsland produce.

Gippsland suppliers also attended the expo bringing Gippsland food and wine including dairy, goat meat, trout, eel, yabbies, organic vegetables and a wide range of olive oils.

Mr Fede used all the food to conduct cooking demonstrations. Other producers at the expo came from Europe, Japan, India, Indonesia, China and South America.

"I got a lot of ideas for my students at the expo and enjoyed networking with other countries," said Mr Fede.

"The food expo also included the World Ice Carving Championships, The World Vegetable Carving Championships and the World Salon Culinaire."

"I also learnt about new fashion foods, and new innovative equipment and packaging," said Mr Fede.

GippsTAFE’s Hospitality Department offers Certificate II Hospitality (Operations), Certificate II Hospitality (Commercial Cookery), and Certificate IV Hospitality (Food and Beverage Supervision).

These courses provide students with the unique opportunity to do theory and on-line study combined with practical experience in GippsTAFE’s Waratah Restaurant.
