GippsTAFE Hospitality Coordinator, Vince Fede, and six GippsTAFE apprentice chefs recently attended a Fine Foods Festival held in Melbourne.

Mr Fede and students Bianca Bell, Michael Demagistris, Jarrod Donnelly, Andrew Gill and Danielle Wood represented GippsTAFE and the Department of Natural Resources by performing cooking demonstrations using Gippsland produce at their festival stand.

Students did cooking demonstrations with Mr Fede daily and also cooked for the International Delegates Dinner in Collins St for the Hon. John Brumby and international guests and buyers.

The students put together an exceptional menu for the night including duck, salmon, prawns, smoked trout, goat, cheeses, vegetables and delicious sauces.

"The Department of Natural Resources and Agribusiness do a wonderful job for Victoria. They work extremely hard to promote Victorian and innovative products at International food shows," said Mr Fede.

GippsTAFE’s Hospitality Department offers Certificate II Hospitality (Operations), Certificate II Hospitality (Commercial Cookery) and Certificate IV Hospitality (Food and Beverage Supervision).

These courses provide students with the unique opportunity to do theory and on-line study combined with practical experience in GippsTAFE’s Waratah restaurant.
