Gippsland › Latest news › GippsTAFELes Toques Blanches Finalist![]() Apprentice Chef Michael Demagistris is chosen as a top 10 finalist GippsTAFE Hospitality Apprentice Chef Michael Demagistris has been chosen as a top 10 finalist in the Victorian Les Toques Blanches Awards for Excellence for 3rd and 4th year apprentice chefs. Les Toques Blanches is an Association of Executive Chefs dedicated to the dissemination of knowledge of professional cookery and the professional attitudes between chefs and cooks, while assisting in the education and training of apprentices and trainees and the promotion of culinary chefs. "The competition was broken up into three stages," said Mr Demagistris. "In the first stage I had to submit a 1000-2000 word essay, explaining why I would like a scholarship in the hospitality industry." Mr Demagistris said that participants who were chosen to go through to the second stage were given one month to produce a five course fine dining menu. The last 10 finalists, including Mr Demagistris, that were chosen for the third stage attended a food competition held at the Box Hill Institute of TAFE, where they were tested on words, foods, spices and different cuts of meats and were then given a three hour period to produce a three course meal that was presented to the judges. GippsTAFE Hospitality Coordinator Vince Fede said that GippsTAFE’s apprentice chefs are consistently achieving high results in both Victorian and National competitions. The winners of the Victorian Les Toques Blanches Awards for Excellence will be announced at a special awards evening which will be held in Melbourne in August.
